Pizza dough is too sticky to handle

The short answer
Sticky is usually hydration your flour cannot absorb, gluten that has not finished forming, or a dough that has got too warm. Weigh your water, give it time and folds, and handle it with wet hands and a scraper instead of more flour.
What you're seeing
The dough clings to your fingers in strings, leaves a film on the bench, and refuses to hold a round shape — set it down and it slowly spreads. Every time you add flour it behaves for about thirty seconds and then goes tacky again. It may feel noticeably warm, and if you have been fermenting for a while it may also feel slack, almost soupy, rather than merely wet. Sticky and strong is a handling problem. Sticky and slack is a fermentation problem, and the two need different answers.
The short answer
Work out which of three things is happening: too much water for the flour you used, gluten that has not finished forming, or dough that has fermented too warm for too long. The first is fixed with a scale, the second with time and folds, and the third with the fridge. In all three cases, stop adding bench flour — wet hands and a metal scraper handle wet dough far better than dry flour does.
Why it happens
Hydration is a ratio, and flours absorb differently
Hydration is water as a percentage of flour weight: 650 g of water to 1000 g of flour is 65%. But that number is a recipe instruction, not a physical constant. A high-protein bread flour around 12.7% has more damaged starch and more protein surface to bind water, and it will take up 3–5% more water than a finely milled 00 at the same protein number before it feels wet. Run a 68% Neapolitan formula with soft 00 flour and it is a joy; run the identical percentage expecting bread-flour behaviour and it is a puddle. The other half of this is measurement. Volume measurements for flour vary by up to 20% depending on how the flour was scooped and settled, which means a "correct" recipe can quietly land at 72% hydration. Weighing both flour and water on a 1 g scale removes the entire category of problem.
The gluten has not caught up with the water yet
Immediately after mixing, water is loose in the dough and the protein network barely exists — of course it is sticky. Twenty minutes of autolyse plus one set of folds and the same dough feels transformed, because the water is now bound inside a gluten and starch matrix rather than sitting on the surface. If your dough is sticky at minute five, that is normal. If it is still sticky after an hour and two sets of folds, something else is wrong.
It is too warm
Dough temperature drives everything. At 27 °C (81 °F) yeast works roughly twice as fast as it does at 20 °C (68 °F), and the dough softens as fermentation proceeds and enzymes begin cutting gluten. Warm, over-fermented dough is sticky in a distinctive way — it is slack, it tears easily, and it smells faintly of alcohol. If that matches, you are looking at over-proofing, and it will also tear when you stretch it.
Fix it now
- Get your hands wet, not floured. Dip your fingertips in water and shake them off. Wet dough does not stick to wet hands, and you add nothing to the formula.
- Use a bench scraper for every lift, fold and divide. Slide it flat under the dough and lift — it releases cleanly where fingers drag and tear.
- Give it a coil fold and 30 minutes. Wet hands, lift the dough from the middle, let the ends tuck under, set it down, cover. Repeat twice at 30-minute intervals. Most "unworkable" dough is workable after the second fold.
- Chill it if you are out of time. Thirty to sixty minutes at 4 °C (39 °F) firms the dough and slows the yeast enough for you to ball it properly.
- If it is genuinely over-hydrated, knead in flour at 2% of the flour weight — 20 g per 1000 g — and no more, then rest 20 minutes before judging. Add it in one go, not in handfuls, so you know what you changed.
- Bench flour is for the launch, not the mix. A thin dusting of semolina under the disc on the peel is fine and useful. A pile of flour worked into the dough is not.
Prevent it next time
- Weigh flour and water every time. Set the ratios with the dough calculator and hit them to the gram — this is the whole game.
- Start at 62–65% and go up from there. Learn what your specific flour feels like at a hydration you can handle before you chase 70%+.
- Autolyse for 20–30 minutes. Mix flour and water only, rest, then add salt and yeast. The dough that comes out the other side is dramatically less sticky for zero extra work.
- Control dough temperature, not just room temperature. Aim for a final mix temperature of 23–25 °C (73–77 °F). In a warm kitchen, use cold water — every 2 °C you drop the water drops the dough by roughly 1 °C.
- Bulk in the fridge if your kitchen runs above 24 °C (75 °F). A cold bulk gives you flavour without the slackness, and the dough balls beautifully straight from the fridge for a New York pepperoni.
- Oil, not flour, for the container. A lightly oiled tub releases cleanly and does not dry a skin onto the ball.

Almost never. Extra bench flour lowers the real hydration of the finished dough and gives you a drier, tougher crust. Use wet hands, a bench scraper, and a set of folds instead — the stickiness usually resolves on its own.
