Pizza prep tools: the two edges that do all the work

What actually matters
Edge geometry, at both ends of the evening. Every tool in this category is a piece of steel with a handle, and the only thing that separates a good one from a useless one is the shape of the edge and how much it flexes.
On the bench, the edge needs to be thin and stiff. Thin gets it underneath dough that has taken hold of the worktop; stiff means it divides without flexing away from the cut. That combination is what stops you adding flour you did not weigh. Wet dough sticks, the instinctive response is to dust the bench again, and that is how a carefully measured 70% hydration dough quietly becomes a 65% one that bakes tight and dry. A thin steel edge slid flat underneath lifts the dough clean off the surface instead, so you can fold, turn and move it without adding anything at all.
Stiffness is also what makes division honest. Dough should be cut, not torn: a pulled division rips the gluten network along the tear line, and that damage is still in the ball when you try to open it later. One decisive downward press with a rigid blade severs cleanly and leaves both halves intact. This is exactly where a flexible plastic bowl scraper is the wrong instrument — it follows a curve, which is what you want inside a mixing bowl and precisely what you do not want on a flat bench. Owning both is reasonable; substituting one for the other is not.
At the other end, the edge geometry question changes from thin-and-stiff to long-and-shearing. A wheel cutter works by rolling under load, and as it rolls it pushes material ahead of and beside itself. On bare crust that is fine. Through melted mozzarella it drags the cheese along the cut line, gathers it into a ridge, and pulls the rest towards the edge. A blade long enough to span the whole pizza shears straight down through the same layers instead of travelling through them, so the cheese parts at the line rather than moving along it. The specification to read is simply length against the biggest pizza you make — a blade shorter than the pie reintroduces the travelling cut it was meant to replace.
Two practical constraints decide whether a long blade is right for you. It wants a firm flat board underneath, because a soft or uneven surface leaves the middle of the cut unsevered. And it needs somewhere to live: half a metre of exposed steel is a genuine storage problem in a normal kitchen drawer.
Handles and materials barely matter. A wooden handle means hand washing; stainless means the dishwasher will not mark it. Neither changes what the edge does.
The picks
Four tools in two pairs, and the pairs are not ranked against each other. The first two work on the bench. The rigid steel edge leads because it is the one that changes the dough — it is the difference between the hydration you weighed and the hydration you baked — and it costs less than almost anything else on this site. The flexible one under it is not a cheaper version of that: it is the edge for a surface a steel blade would mark, and for the inside of a bowl, where a straight rigid blade cannot follow the curve.
The second pair cuts, and both are genuinely the last things to buy. The long blade gives the better cut and is the more awkward object: it shears the whole diameter at once, and it wants a board, a drawer that will take it, and a pizza you are willing to lift out of the tin. The short wheel is the opposite bargain — it does to melted cheese what every wheel does, and in exchange it cuts a tray bake in the tin it baked in without scoring the coating. Get the surface, the scale and the peel working first, then pick up whichever of these two matches the formats appearing on your table.

How we chose
The record is uneven here, and it is worth knowing which half you are reading. The cutter's maker publishes a product page, so its length, material and construction are the manufacturer's own figures. The scraper's maker publishes nothing at all — no page, no model number — so its thickness is the seller listing's figure, and there is nothing better to check it against. The two carded without review pages both have a maker's page as well: Ateco publishes item 1303 at 13.3 × 8.9 cm (5.25 × 3.5 in) in flexible plastic, made in Korea, and OXO publishes a page for its 10 cm (4 in) wheel and the tapered non-metal blade on it. So the dimensions and materials given for those two are the manufacturers' own figures rather than a listing's paraphrase of them. What those dimensions do to wet dough and to melted cheese is physics, and the handling around them is this site's dough canon on hydration and gluten damage. We own no test kitchen and run no product trials, so nothing here is ranked by first-hand use. Between two tools with the same edge geometry, price and availability are the only things left to separate them.
If this goes wrong
If your bench work is a fight, start at dough that is too sticky to handle. The dough is usually fine; the handling is what needs the tool, and reaching for more flour is the move that turns a recoverable evening into a dry crust.
If the balls open unevenly or split, look back a step to how they were divided. Dough that tears when you stretch it is often carrying damage from a division that was pulled apart rather than cut, and no amount of gentle handling later repairs a torn gluten network.
At the table, cheese that ends up in a ridge along every cut and slides off the slice is the wheel doing what wheels do — see toppings sliding off when slicing. Lift the pizza onto a board before you cut it: pressing a sharpened edge into a metal pan blunts the blade and leaves the corners uncut anyway. The high-hydration tray doughs are where both tools stop being optional — a Sicilian sfincione or a Roman al taglio is worked at hydrations where bare hands are simply the wrong instrument.
