Mozzarella for pizza: moisture decides the top, format decides the melt

What actually matters

Moisture, and then format. That is the entire category, and the first of the two decides more about your pizza than any brand on the shelf.

The water is the whole argument. Mozzarella comes in two broad states. Fresh mozzarella — a ball packed in liquid, sold as fior di latte when it is made from cow's milk — sits at roughly 52–60% moisture. Low-moisture mozzarella, the aged, firmer, faintly salty cheese sold as a block or a bag, sits at roughly 45–52%. Those two bands look close on paper. On a pizza they are two different ingredients, because all of that water has to leave during the bake, and the only question is whether it leaves as steam or as a puddle.

That is where bake time comes in, and it is why the same cheese can be right in one oven and wrong in another. A Neapolitan bake runs 60 to 90 seconds at 430 °C (810 °F) and up. At that intensity the water in a torn fresh ball flashes off almost immediately — it becomes steam, it lifts away, and the cheese sets before it can flood anything. A home oven cannot do that. A domestic bake runs six to eight minutes at 250–290 °C (480–550 °F), and across minutes rather than seconds a high-moisture cheese does not flash; it weeps. Whey pools on top of the sauce, soaks down into a base that is trying to crisp from below, and you get the exact failure described in watery pizza from fresh mozzarella. The rule that falls out of this is short: the shorter and hotter your bake, the wetter the cheese you can get away with. For a home oven, low moisture is not a compromise. It is the correct ingredient, and treating it as the cheap substitute for a fresh ball is how people end up disappointed by both.

This site is written for the six-to-eight-minute bake, so that is the answer this page gives, and it gives it plainly: low moisture is right, and a fresh ball in a domestic oven is the wrong tool rather than an ambitious one. But the other oven exists, and a page that spends two paragraphs describing the cheese that oven wants should then say which cheese it means instead of sending the reader away to find out. Whole milk against part skim, which runs the opposite way to intuition. Whole-milk low-moisture mozzarella carries substantially more fat in dry matter than the part-skim version. That fat melts out early in the bake, spreads across the surface and buffers the cheese against radiant heat coming down from a grill element. Part-skim, with less fat to do that, dries out and blackens first — which is why the "lighter" cheese is the one that scorches while the base is still pale, the problem set out in the cheese burns before the base cooks. Buying whole milk here is not indulgence; it is the version engineered to survive a domestic oven.

Then format, which is a question about the surfaces. Melted mozzarella on a good pizza is not a field of separate blobs; it is one continuous sheet, and a sheet forms where cut faces touch each other and fuse. Pre-shredded cheese is dusted with an anti-caking agent — typically rice flour, potato starch or powdered cellulose, often with natamycin as a mould inhibitor — for the entirely rational reason that shreds in a sealed bag will otherwise weld themselves into one lump before they reach you. None of those additions is a safety question. They are a performance question, because the coating is engineered to sit on precisely the surfaces that need to fuse, and it does not switch itself off when the oven door closes.

How much that costs you depends, again, on bake time. In a home bake with two or three minutes of melt available, the coating is overwhelmed and the shreds knit anyway — which is why supermarket shred works perfectly well on a slice pizza or a pan pizza and why arguing otherwise is a way of losing an argument with your own dinner. In a 90-second bake there is no time for that, and the top stays visibly granular. A block gives you nothing between the faces, in exchange for five minutes with a box grater. It also gives you the one thing a bag cannot: cheese with thickness, cut into cubes for a Detroit rim, where shreds simply burn to lace before the base is done.

Two practical consequences worth planning for. Shredded cheese has an enormous amount of exposed surface, so an opened bag dries in a domestic fridge far faster than a vacuum-packed block does, and cheese that has dried browns sooner and stretches less. And a block wants grating cold, straight from the fridge, or it smears — then letting the shreds come up to room temperature before they meet the pizza, so the first minute of the bake is not spent thawing cheese while the base is already cooking.

Four cheeses, and three of them are one specification in different shapes: low-moisture, whole-milk mozzarella, which is the correct choice for any bake longer than about two minutes. The axis between those three is format and pack size, not quality.

The block is the default because nothing sits between its cut faces and because it is the only one you can cut thick, and it costs you a grater and the time to use it. The two bags are a real trade rather than a defeat — the coating that keeps the shreds separate is genuinely overwhelmed in a slow home bake, and a cheese you actually use beats a better one you never open. Between the two bags, pick on volume and on paperwork: one is sold in bulk and is the way to cover a lot of pizza if you will get through it before the cut faces dry, and the other comes as a single small bag whose maker publishes the fullest record on this page for exactly the size it sells: what is in it, and what it carries per serving.

The fourth is a fresh ball, and it is on this page for one oven. In a 60-to-90-second bake at 430 °C (810 °F) and up it is the correct cheese and the other three are the compromise. In a six-to-eight-minute home bake it is the wrong cheese, and draining and tearing reduce the problem rather than removing it: across minutes the water leaves as whey rather than as steam, onto a base that is trying to crisp. Buy it if you have the oven for that bake. If you do not, it is not an upgrade waiting for you — it is a different pizza.

How we chose

The specifications come from published records, and the four here do not come from records of equal quality — which is worth stating rather than smoothing over. Two of them have review pages. For the block, the four-item ingredient panel and the description of the acid set are the maker's own, published on its site; the 907 g (2 lb) pack size is the seller's figure and does not appear on the maker's page at all. For the bulk shred, the maker publishes the pack sizes and the milk types but carries no ingredient or nutrition panel for it, so the ingredient list quoted on its review page comes from the published retail listing rather than from the manufacturer, and is labelled that way. Both of those Amazon listings are generic third-party ones.

The other two have no review page yet, and their records run in opposite directions. Sargento publishes the fullest record on this page, on its own site and for the one size it sells: the complete ingredient list — including the potato starch, powdered cellulose and natamycin that come with any shred — and a complete nutrition panel. The block's maker publishes both of those too, and says so on its review page; what it does not publish is the pack size the listing actually ships, which is why the two records are not equivalent even though both are the maker's. BelGioioso publishes the thinnest. Its site gives an ingredient set for a water-packed line and another for a thermoform-packed line without saying which of the two the 227 g (8 oz) ball is, and it publishes no moisture figure for that ball at all. So nothing is claimed for it here beyond what its style settles — fresh mozzarella is the wetter of the two classes described above — and it is carded on that and on bake time rather than on a number nobody has published.

What those specifications mean in an oven is food science and this site's dough canon: moisture bands of roughly 45–52% against 52–60%, home ovens at 250–290 °C, a domestic bake of six to eight minutes against a Neapolitan 60 to 90 seconds, and fat in dry matter as the thing that delays a scorch.

Salt does make a comparison now, and it is a narrow one. Both makers publish a panel and both state it per 28 g — Sargento's serving reads "1/4 Cup (28g)" and the block's "1 oz. (28g)" — so there is no volume to convert and no assumption to make. Sargento publishes 190 mg of sodium per 28 g against the block's 200 mg, which is about 1.7 g of salt per 100 g against 1.8 g. That is a difference of one part in twenty, inside the range a production run moves on its own, and it is not a reason to choose either cheese. It is reported because both figures are published and because leaving out a number a maker prints is the same kind of error as inventing one. The other two do not enter it: the bulk shred's maker publishes no nutrition panel for it, and nothing is claimed for the fresh ball here beyond what its style settles.

If this goes wrong

If the middle of the pizza comes out swimming, the cheese is the first thing to check and the moisture class is the answer more often than the brand. Read watery pizza from fresh mozzarella for how much whey a fresh ball will actually shed in a long bake, and what draining and tearing rather than slicing buys you if a fresh ball is what you have. A classic margherita is built on fresh mozzarella for good reason — but it is built on a fast bake too, and the recipe tells you to drain the cheese for a quarter of an hour before it goes anywhere near the dough.

If the top browns and blisters while the base is still pale, stop changing cheeses and read the cheese burns before the base cooks. Whole milk rather than part skim buys you real time here, but the underlying fault is usually heat balance — a deck that is not hot enough for how close the top of the pizza sits to the element — and no cheese fixes that on its own.

And if the cheese comes out as separate islands rather than one sheet, ask how much melt time the top actually got. Under about two minutes — a proper Neapolitan bake, or a very hot deck — an anti-caking coating never gets overwhelmed and the shreds never fuse, so of the three low-moisture picks here only the grated block will knit. Read that as a choice inside the low-moisture family and not as a recommendation for that pizza: a 60-to-90-second bake belongs to fresh mozzarella, torn and drained, and a low-moisture block on it reads rubbery and flat however good the block is. That is precisely why the fresh ball is carded on this page rather than described on it and bought somewhere else. In a six-to-eight-minute home bake the coating gives up long before the pizza does, which is why bagged shred is entirely at home on a New York cheese slice or a same-day pan pizza; islands on a bake that long point somewhere else, usually at cheese that went on frozen or straight from the fridge, or at a top that never came up to temperature.
