Dough storage: containers that make a cold ferment work

What actually matters
Three properties, and the first one is the property nobody shops for.
How fast the mass chills. A cold ferment assumes the dough actually reaches fridge temperature reasonably promptly, because the schedule is written for the rate yeast works at down there. A single large covered bowl is one thermal mass, and the middle of it can take five or six hours to come down while the yeast carries on at close to room-temperature rates. That is hours of fermentation the recipe never budgeted for, and it is why the same formula behaves differently in one big bowl than in two smaller ones. Be careful about how you expect that to scale, though, because the arithmetic is not the obvious one: what governs the cooling rate is how far heat has to travel from the middle of the dough to a wall, so halving the volume of a container of the same shape only shortens that distance by about a fifth. Depth is the lever, not the number of tubs. Two containers help most when they let you keep the dough in shallower layers than one deep bowl would — and a batch portioned into balls, each with a wall close by, chills faster than either.
A lid that seals. Cling film tears, it does not seal against a bowl rim, and it sticks to the dough it is supposed to protect. Over 48 to 72 hours the exposed surface dries into a leathery skin that will not relax again, and you meet it later as a dough that fights every stretch and tears through the middle. A proper lid removes that failure completely, because the dough then sits in air it has saturated itself. It should seal without being airtight in the pressurised sense — fermentation makes gas, and a lid that cannot vent at all will pop itself off a fridge shelf at three in the morning.
A shape that stacks, and a size that matches the job. Fridge space is usually the real constraint in a domestic kitchen, so a container that stacks squarely under another one is worth more than a litre of extra capacity. Check the published dimensions against your shelf before you buy, and if a listing does not print them — many do not — measure the shelf anyway and be ready to send the box back. Size splits the category cleanly: bulk containers hold a whole batch through its first rise, while individual balls want a wide, shallow tray where each one can relax into a disc. Stack balls in a tall bucket and they press together, and you tear them apart at the end — which damages the gluten exactly where you are about to stretch it.
One smaller specification is worth more than it sounds: translucency. A wall you can see through lets you judge the bubble structure without opening the lid and venting the humidity you have spent two days accumulating, which is the difference between reading a ferment and guessing at it.
Material is the one place where the boring answer is right: food-grade polypropylene is light, cheap, dishwasher safe, and indifferent to a fridge. It scratches, so keep steel out of it — a scored wall stops being clear and starts holding on to dough.
The picks
Four containers, and they are not four grades of the same thing. The top pick is there for the property the section above says matters most and nobody shops for: it is wider than it is deep, so the middle of the mass is never far from a cold wall. That it also prints its dimensions sounds like a footnote until you are standing at an open fridge holding a box that does not fit.
The pair of tubs sits directly below it and is still a good buy. It was the pick on this page before a shallower body was there to compare it against, and nothing about it got worse in the meantime: splitting a batch across two bodies genuinely shortens the chill, and a translucent wall lets you read a ferment without venting it. How we chose
The published record here is uneven, and the page says so rather than dressing it up. The top pick's maker publishes an outer dimension for the model, which is what lets you measure a shelf before you commit to a shape, and the tray kit's listing prints its footprint too. The other two print neither a model number nor a dimension, so for those the only figures anyone can stand behind are capacity, material and the fact that the lids seal — nothing we hold for either is a manufacturer's sheet, whatever their makers may publish elsewhere. Everything else here is argued from thermal behaviour — how a mass of dough loses heat, what a sealed headspace does to a surface — and from this site's own dough canon on cold fermentation schedules. We own no test kitchen and run no product trials, so nothing here is ranked by first-hand use. If this goes wrong
The signature failure of the wrong container is a cold-fermented dough that went slack and will not hold its shape. Nine times out of ten it fermented warm for a quarter of its schedule because the mass took most of the evening to chill, and the fix is shallower masses — more containers, or balled dough — rather than less yeast.
The other one is drying. A dough that will not stretch after two days in the fridge often has a skin on it that never relaxed — a lid problem wearing a gluten problem's clothes. If the surface is leathery and the interior is fine, that is the diagnosis.
And if the dough comes out smelling of alcohol with a collapsed, bubbled top, read over-proofed dough: the container did its job and the schedule was too long for the yeast dose, which is a formula fix and not a hardware one. Watching the bubble structure through a translucent wall across a 72-hour cold ferment is the cheapest way to catch that before it happens.
