Pizza dough won't stretch (springs back)

The short answer

The gluten is tensioned, not broken. Cover the ball and rest it — 20 minutes if it is already at room temperature, 1–2 hours if it came out of the fridge — then stretch again in stages.

What you're seeing

You press the ball out to 20 cm, lift your hands, and it pulls itself back to 15. Push harder and the middle thickens instead of thinning. The rim feels rubbery rather than pillowy, and the whole disc has a cold, dense weight to it. Crucially, nothing has torn — no thin windows, no holes, no shredding at the edges. Dough that fights you but stays completely intact is strong dough, not damaged dough, and that changes the fix entirely. If it were ripping instead of rebounding you would be dealing with dough that tears when stretching, which is the opposite problem.

The short answer

The gluten network is fully tensioned and has not been given time to relax. Cover the ball and leave it alone — 20 minutes on the bench if it is already warm, 60–120 minutes if it came straight from the fridge — then stretch again in two or three short stages instead of one long fight. Nothing you do with your hands right now beats what the clock does for free.

Why it happens

Elasticity and extensibility pull in opposite directions

Gluten is two proteins doing two jobs. Glutenin forms long, cross-linked chains that give dough its elasticity — the snap back. Gliadin is smaller and more fluid, and it gives extensibility — the willingness to flow and stay where you put it. A good pizza dough needs both, but they are in tension: every minute of kneading you add builds more glutenin cross-links and pushes the balance towards snap.

When you stretch the disc you are loading that network. The bonds do not break; they stretch and store the force, and when you let go they release it. Left under tension and undisturbed, though, those bonds slowly rearrange into a new, unstressed configuration. That is stress relaxation, and it is the entire mechanism behind "just rest it". Ten to twenty minutes of covered rest does more for extensibility than any amount of pressing.

Cold dough is tight dough

Straight out of a 4 °C (39 °F) fridge, gluten relaxes several times more slowly than it does at 20 °C (68 °F), and the whole ball is physically stiffer. Warm the dough and both problems solve themselves at once: the network softens and relaxation speeds up. A 250 g ball needs roughly 90 minutes in a normal kitchen to bring the centre — not just the skin — up to around 18 °C (64 °F). Pulling it out 15 minutes before you want to bake is the single most common version of this mistake, and it is why long cold fermentation gets blamed for a problem that is really about timing.

Too much flour strength, or too much kneading, for a same-day dough

Caputo's two 00 bags are not interchangeable. The blue-bag Chef's flour is the strong one — W300–320, around 13% protein, built for a 24–72 hour ferment where the network has time to both develop and relax. Use it for a four-hour same-day dough and you get all of the elasticity and none of the softening — a ball that behaves like a rubber band. The red-bag Pizzeria flour is milder at W260–280 and around 12.5% protein, designed for 8–24 hours at very high heat, and it comes to hand faster on a short timeline. Kneading does the same thing from the other direction. Take a stand mixer well past the windowpane stage and you are adding tension, not structure — a strong flour and an over-mixed dough compound into a disc that will not stay where you put it.

Fix it now

  1. Cover the ball and stop touching it. An upturned bowl or a lidded container — anything that stops a dry skin forming. A skinned ball resists at the surface even after the inside has relaxed.
  2. Give it the right rest. 20 minutes if the dough is already at room temperature. 60–120 minutes if it came from the fridge. Set a timer; the clock is doing the work.
  3. Check before you commit. Lift the ball and let it hang from one edge for a second or two. If it droops and lengthens under its own weight, it is ready. If it holds its shape like a ball of putty, give it another 15 minutes.
  4. Stretch in stages, not in one push. Press from the centre outwards with your fingertips, leaving a 1.5 cm rim untouched, until you have a 15 cm disc. Then drape it over the backs of your knuckles and rotate, letting gravity pull it wider. Stop at each stage before it starts to resist.
  5. If it still fights, rest between stages. Two 10-minute rests with a press in between will beat one 20-minute wrestling match every time. Rush nothing, force nothing.
  6. Last resort only: if dinner cannot wait, press it out flat and accept a thinner rim. That is the rolling-pin trade — you get your pizza, you lose your cornicione.

Prevent it next time

  • Ball 24–48 hours ahead and cold ferment. Long, cold rest gives gluten time to relax while flavour develops. Same-day dough is where springback lives.
  • Pull the dough 90 minutes before you bake. Put it on the counter when you turn the oven on, not when you reach for the peel.
  • Proof in individual lidded containers. Cling film tears and lets the surface dry; a sealed container keeps the ball soft and skin-free right up to the stretch.
  • Knead to the windowpane and stop. Stretch a walnut of dough thin enough to see light through it. The moment you can, you are done.
  • Match flour strength to your timeline. A W300–320 flour (Caputo Chef's) for a two-day ferment; a W260–280 00 or a 12–13% protein bread flour for a same-day New York-style bake. Get the ratios right first with the dough calculator.
  • Ball gently. Over-tightening the ball at shaping loads the network hours before you ever try to stretch it. Fold, roll once under a cupped hand, and leave it.

Quick questions

Can I use a rolling pin to force it out?

You can, and it will work, but a pin presses the gas out of the rim and you lose the puffed cornicione. Rest the dough for another 20 minutes instead — the pin is the last resort, not the first move.

How long should dough sit out of the fridge before stretching?

For a 250 g ball, 60–120 minutes in a 20 °C (68 °F) kitchen. You are waiting for the centre to reach roughly 18 °C (64 °F), not just the surface, so give it the full window.

Does stronger flour make dough harder to stretch?
