Pizza dough tears when stretching

The short answer
Tearing means the gluten network is weak or unevenly thinned — under-developed, over-proofed, or stretched from the middle. Build structure with folds, then open the disc evenly and let gravity do the thinning instead of pushing the centre out.
What you're seeing
You are halfway through opening the ball when a hole appears — usually dead centre, usually while the rim is still thick and untouched. Sometimes it is not one hole but a patchwork: paper-thin windows next to areas that never thinned at all. The dough may feel slack and slightly shaggy rather than smooth and springy, and it does not spring back when you let go. That last detail matters. Dough that rebounds without tearing is too tight, not too weak. Dough that tears has the opposite problem: not enough structure holding it together.
The short answer
Either the gluten network was never fully built, or fermentation went on long enough to start breaking it down, or you thinned one spot far faster than the rest. Build structure with a proper knead or two sets of folds, confirm it with the windowpane test, and then open the disc evenly — fingertips to an even round, then gravity over your knuckles — instead of pushing the centre thinner and thinner.
Why it happens
The network was never built
Gluten does not exist in flour. It forms when glutenin and gliadin hydrate and get worked — by kneading, by folding, or slowly by time alone. Three minutes of half-hearted mixing gets you hydrated flour with a few short chains, not a continuous elastic sheet. When you stretch that, the load concentrates wherever the chains are thinnest and it opens up.
The fix is mechanical and cheap. Either knead 8–10 minutes by hand until smooth and tacky, or use four sets of stretch-and-folds spaced 30 minutes apart during bulk fermentation. Folds are gentler and, for wet doughs above 65% hydration, usually better. Test before you ball: a walnut of dough should stretch into a translucent window before it tears.
Fermentation went too far
The opposite failure looks similar and is far more common in home kitchens with warm counters. As dough ferments, protease enzymes steadily cut gluten chains, and the acids produced by yeast and bacteria accelerate that. Past the peak, the network is being dismantled faster than it is being supported. The dough goes slack, sticky, and fragile — it tears under its own weight when you lift it. If your ball also smells sharply of alcohol or has collapsed in the container, you are looking at over-proofed dough and no amount of careful handling will save the stretch.
Not enough protein for the job
Plain all-purpose flour runs 10–11.5% protein. At 30 cm that is genuinely marginal. A King Arthur bread flour at 12.7% or a Caputo Chef's 00 at W300–320 builds a sheet with real tensile strength. This is not snobbery — it is the difference between a dough that tolerates a clumsy stretch and one that does not.
You thinned the middle first
The centre of a pressed disc is always the thinnest part, and it is the part with the least support. Every extra push there thins it faster, which makes it thinner still, which makes it the next place to fail. Good stretching moves outward from an already-even disc and uses gravity — knuckles, drape, rotate — rather than downward pressure. The full sequence is in our guide to stretching without tearing.
Fix it now
- Stop and assess the dough, not the technique. Poke it. Springy and smooth means the problem is how you are stretching. Slack, sticky and sour-smelling means it is over-fermented and today's pizza will be a flatter one.
- Patch what you have. Pinch the tear closed, take a pinch of dough from the thick rim, press it over the hole, and flatten. Launch it patch-side up and sauce lightly over it.
- Rest 15 minutes before trying again. A short covered rest lets the surrounding gluten relax, which spreads the load away from the thin spot instead of concentrating it there.
- Restart the stretch properly. Press from the centre outwards with fingertips, leaving a 1.5 cm rim. Then lift the disc, drape it over the backs of both fists, and rotate slowly, letting the weight of the dough do the pulling. Never pull with your fingers.
- Work on semolina, not a bare bench. Drag on a dry surface holds one part of the disc still while you pull the rest — that shear is what opens holes on the peel.
- If the dough is genuinely over-fermented, ball it again, rest 20 minutes, and bake it thinner and flatter as a Margherita. It will not puff, but it will be good.
Prevent it next time
- Develop the gluten and prove it. Windowpane test before you divide. If it fails, give it two more folds and 30 minutes.
- Divide with a bench scraper. Tearing balls apart by hand shreds the sheet you just built. One clean cut, then shape.
- Watch the clock and the temperature together. A dough that is perfect at 4 hours and 20 °C (68 °F) is past it at 4 hours and 26 °C (79 °F). Bulk in the fridge if your kitchen runs hot.
- Use flour with enough protein. 12–13% for New York style, W280–320 for Neapolitan. Set the ratios with the Neapolitan calculator so hydration and flour strength are matched rather than guessed.
- Do not over-hydrate before you have the handling for it. At 70%+ a weak network has nothing to hold onto, and the dough feels sticky and unmanageable as well as fragile. Learn the stretch at 62–65% first.

Quick questions
How do I know if my dough has enough gluten?
Use the windowpane test. Pull a walnut-sized piece slowly between your fingers — if it stretches thin enough to see light through without tearing, the network is developed. If it rips at once, it needs more kneading or another set of folds.
Can I patch a hole in stretched pizza dough?
Yes. Pinch the edges of the tear together, press a small piece of dough from the rim over it, and flatten. It will not be invisible, but it will hold sauce and bake through. Launch it with the patch facing up.
Does higher protein flour stop tearing?
Usually. Below about 11% protein there simply is not enough glutenin to build a sheet that survives a 30 cm stretch. A 12.7% bread flour or a W300–320 00 flour such as Caputo Chef's gives you far more margin for error.
