Three specifications, and the market's differentiation is in none of them.

Resolution of 1 g or better. This is the one that decides whether a formula means anything. Baker's percentages express water, salt, yeast and oil against the flour weight, so the flour weight has to be a real number. Measured by volume it is not: a cup of flour runs from roughly 120 g to 160 g depending on whether it was scooped from the bag, spooned in, or shaken level — a spread of about a third. Carry that spread into a 65% hydration formula and what actually lands in your bowl is somewhere between about 50% and 75%. One of those is a brick and the other is a puddle, and neither is the recipe you followed.

A tare button. Tare is what turns weighing from a chore into a reflex. Bowl on, zero, flour in, zero, water in, zero, salt in. One container, no measuring jugs, nothing extra to wash. Without it you are doing arithmetic in your head while your hands are wet, and that is where mistakes come from.

Enough range for a whole batch in one bowl. A four-ball dough plus the bowl it sits in is the number to check against, and any scale sold for kitchen use clears it. Below that you end up weighing in halves and adding rounding errors on purpose.

That is the entire requirement. Glass platforms, app connectivity, nutritional databases and rechargeable cells touch none of it. Two specifications that look relevant and are not: a stated capacity beyond about 10 kg, which is a butcher's problem rather than a baker's, and a claimed accuracy figure — at this price and class the honest limit is the graduation size, so read the graduation and ignore the marketing.

There is one genuine limitation to plan around. A 1 g scale reads a 3 g yeast dose honestly, but a long cold ferment often wants 0.1–0.15% of the flour weight, which on a single ball is well under a gram. Either scale the batch up until the weight lands somewhere the display can see, or keep a 0.01 g jeweller's scale for that one ingredient. Do not solve it by eye. Be precise about what that page gives you: a 5 kg (11 lb) capacity, and resolution down to the gram written as prose rather than as a formal graduation line. This page has just told you to read the graduation and ignore the marketing, so it is worth saying that the top pick's figure is the maker's own prose rather than a specification table — it is still the maker's, and it is still one number attached to one model. If this goes wrong

Most "the dough was wrong" problems that follow a volume measurement are hydration problems wearing a disguise. A dough that ends up too sticky to handle is usually a light cup of flour against a full jug of water; a dough that will not stretch and springs back is the same error in the other direction, a packed cup that quietly took the hydration down to something closer to bread. Both look like technique, and neither is.

Yeast is the other place a number decides the evening. A gram either way separates a dough that is ready in the morning from one that has not risen — or one that overshot in the night and collapsed. Weigh it, note it, and change one variable at a time; that is the actual value of a scale, and it is worth more than the accuracy.

Two things a scale cannot fix, so that you know where to look instead: flour that is not the strength the formula assumed, and water hot enough to kill the yeast outright, which starts around 46 °C and is certain by 60 °C.

Who should skip this
