Pizza dough over-proofed (smells of alcohol)

The short answer

The yeast has run through its sugars and enzymes are now cutting the gluten faster than it can hold. Get the dough cold immediately, re-ball it to rebuild what structure is left, and bake it within the hour.

What you're seeing

You lift the lid and get a sharp hit of alcohol — closer to nail polish remover than to bread. The ball has lost its dome and spread into the corners of the container. Big flat bubbles sit on the surface, and when one pops it leaves a crater rather than closing up. Lift the dough and it stretches and thins under its own weight before you have done anything to it. Poke it and the dent stays, or worse, the whole ball sighs and deflates. This is a dough that peaked some time ago and has been going backwards since.

The short answer

Fermentation has run past its endpoint. The yeast has consumed the available sugars, the by-products have accumulated, and protease enzymes are now cutting gluten faster than the network can compensate. Cool the dough hard to stop the process, re-ball it to rebuild what structure remains, and bake within the hour — this dough has no more time in it.

Why it happens

The yeast ran out of food

Flour carries only a small amount of free sugar. Amylase enzymes make more by breaking starch down into maltose, but they work at a fixed rate, and a heavily yeasted dough outpaces them. Once the accessible sugars are gone, gas production falls off a cliff while everything else keeps going. That is why an over-proofed dough is simultaneously full of holes and unable to rise any further — and why it bakes without oven spring, giving you a flat, heavy crust.

Enzymes and acid are dismantling the gluten

The same long ferment that develops flavour also runs protease enzymes that cleave gluten proteins. Early on this is useful — it is exactly what makes a 48-hour dough more extensible than a 4-hour one. Past the peak it is destructive. Falling pH from accumulating organic acids speeds protease activity up further, so degradation accelerates rather than plateaus. The dough goes from beautifully extensible to structurally gone over a few hours, and once the chains are cut nothing rebuilds them.

The alcohol and the acid are telling you the stage

Yeast produces ethanol alongside carbon dioxide, roughly gram for gram. A healthy dough carries a faint sweet, beery note. When you smell solvent, ethanol has accumulated well beyond that, and the sharp vinegary edge that often comes with it is acetic acid from bacterial activity — a marker that the ferment has been long, and probably warm.

The dose was wrong for the temperature, not the recipe

Almost every over-proof in a home kitchen is a temperature accident. A dough scheduled for 24 hours at 4 °C (39 °F) that spends its first three hours on a 26 °C (79 °F) counter has already used a large part of its budget before it ever reaches the fridge. Domestic fridges also run warmer than people assume — 7–8 °C (45–46 °F) on the door shelf is common, and at that temperature yeast is far from dormant. Fix it now

  1. Get it cold immediately. Into the coldest part of the fridge, uncovered for the first 10 minutes to shed heat, then lidded. Cooling is the brake; everything else is secondary.
  2. Assess honestly after 20 minutes. Lift an edge. If it stretches thin but holds, you have a rescue. If it separates under its own weight and smells strongly of acetone, the gluten is degraded — make focaccia or flatbread with it and start a new dough.
  3. Degas and re-ball. Press the ball flat, fold the edges into the centre four times, flip it seam-side down and roll it once under a cupped hand to tighten the skin. You are rebuilding surface tension, not gluten.
  4. Rest 20–30 minutes cold, then bake. Long enough to relax for the stretch, short enough that fermentation does not restart. Do not give this dough another two hours at room temperature.
  5. Stretch gently and expect less rim. Fingertips only, no drape or knuckle stretch — the network will not survive it. Accept a flatter cornicione.
  6. Bake it hot and fast. As high as your oven goes. There is little gas left to expand, so heat and speed are what give you any lift at all.

Prevent it next time

  • Bulk in a straight-sided tub with a mark at the start level. You are watching for 50–70% growth, and you cannot judge that by eye in a round bowl.
  • Match yeast to the schedule, not to the recipe you read. 0.2–0.3% instant yeast for a 48–72 hour cold ferment, 0.5–0.7% for a same-day dough at 22 °C (72 °F). Set it with the Neapolitan calculator rather than copying a percentage out of a recipe.
  • Chill the dough straight after mixing for long ferments. Every hour on a warm counter costs several hours of fridge time.
  • Check your fridge with a thermometer. Back of the middle shelf at 4 °C (39 °F) is the target. The door is not the place for dough.
  • Use a flour that can take the distance. A W300–320 flour like Caputo Chef's (the blue bag) survives 72 hours. The red-bag Caputo Pizzeria at W260–280 is built for 8–24 hours and is going slack well before that, and a weak all-purpose flour is gone by 36.
  • Learn the peak by feel. A ball at its peak is domed, jiggly, and springs back slowly and incompletely from a poke. Once it springs back not at all, you are late — the same dent that means an under-risen dough has not started means an over-proofed one has finished.
  • Sourdough is more forgiving on flavour and less on structure. The acidity that makes a sourdough Margherita taste good also accelerates protease activity, so watch it more closely, not less.

Can you save over-proofed pizza dough?

Sometimes. If the ball is slack but still holds together, degas it, re-ball tightly, chill for 30 minutes and bake within the hour. If it tears at a touch and smells strongly of acetone, the gluten is degraded and no amount of reshaping will bring it back.

Why does over-proofed dough smell like alcohol?

Yeast fermentation produces carbon dioxide and ethanol in roughly equal measure. Early on the gas dominates; once the dough is saturated and the sugars run low, the ethanol and its sharper by-products are what you notice.

How long can pizza dough cold ferment before it over-proofs?

With 0.2–0.3% instant yeast at 4 °C (39 °F), a strong W300–320 flour such as Caputo Chef's holds up for 48–72 hours. Weaker flour or more yeast shortens that sharply — at 0.6% yeast you can be past the peak in 24 hours.
