The unglamorous fix for cold fermentation: a lid that actually seals, and a wall you can read the ferment through without ever opening it.

What it is

Two translucent, BPA-free, food-grade tubs of 3.8 litres (4 US quarts) each, with lids, dishwasher safe. That is the whole of what the seller publishes: there is no model number on the listing and no dimensions, so treat everything below as an argument about what a sealed tub does rather than as a spec sheet.

Nothing about them is designed for pizza. They are the commercial food-storage tubs that professional kitchens portion into, which is precisely why they suit dough: the lid seals, the wall is see-through, and the plastic does not care about a fridge.

Be clear about the size, because the marketing around dough tubs tends not to be. At 3.8 litres this is a bulk container — a batch of dough, not a single ball. It comfortably takes the bulk rise for a four-pizza mix. It is not the flat, wide tray you portion individual balls into.

What it changes

Two things: how fast the dough gets cold, and what its surface is like when it comes out.

Chilling speed is the one people miss. A cold ferment is a schedule, and the schedule assumes the dough actually reaches fridge temperature reasonably promptly. A single large covered bowl of dough is one thermal mass, and the middle of it can take five or six hours to come down, during which the yeast is still working at close to room-temperature rates. That is time the recipe did not budget for. Splitting the same batch across the two tubs helps, though not by as much as the arithmetic suggests: what sets the cooling rate is how far heat has to travel from the centre of the dough to a wall, so halving the volume of a similar container shortens that distance by only about a fifth. The real lever is depth. Keep each tub shallow rather than merely smaller — or portion the batch into balls — and the middle of the dough is always close to a cold wall, which is the difference between a dough at its peak on Saturday evening and one that has gone slack because it effectively fermented warm for a quarter of the schedule.

Surface drying is the other. Cling film tears, it does not seal against a bowl rim, and it sticks to the dough it is meant to protect. Over 48 to 72 hours the exposed top of the dough dries into a leathery skin that will not relax again, and the result is a dough that fights every stretch and tears through the centre. A lid that seals removes that failure completely, because the dough sits in air it has saturated itself.

The translucency matters more than it sounds. You can watch the bubble structure through the side wall, which means you can judge the ferment without opening the lid and venting the humidity — genuinely useful across a 72-hour cold ferment, and the fastest way to confirm your yeast is alive before you commit an evening to a margherita.

One handling note: use a plastic or silicone scraper inside them. Steel will score the walls, and once a wall is scratched it stops being clear and starts holding onto dough.

Who should skip it

Skip them if you ferment same-day. A bowl with a plate on top handles a four-hour room-temperature rise perfectly well, and every argument above is about the fridge.

Skip them too if what you actually want is per-ball storage. Individual balls want a wide, shallow tray where each one can spread into a disc; stacking balls in a tall round bucket presses them together and you tear them apart at the end. And if fridge space is your binding constraint rather than dough quality, measure the shelf first — the listing does not publish dimensions, and a tub that will not fit is a tub you stop using after one bake.
