Watery pizza from fresh mozzarella

The short answer
Fresh mozzarella runs 52–60% water against 45–52% for low-moisture, and most of it leaves in the first two minutes of the bake. Tear it and drain it 30–60 minutes ahead, use less of it, and put it on in cubes rather than slices.
What you're seeing
The pizza looked perfect through the oven door. Then you slide it onto the board and a thin milky liquid runs out from under the cheese and settles in a pool in the middle. Lift a slice and the underside is damp, though the rim is crisp and the edges of the base are fine. Sometimes the sauce and the cheese have stopped being two things and become one pink, watery layer sitting on top of the dough. Nothing burnt, nothing raw — the pizza is simply swimming.
The short answer
Fresh mozzarella is roughly half water by weight, and most of the loose part of it leaves in the first two minutes of the bake. Tear the ball rather than slicing it, drain it for 30–60 minutes before you build the pizza, and use less than you think you need. If your oven takes more than about six minutes to bake a pizza, swap to a low-moisture whole-milk mozzarella and keep the fresh stuff for the pizzas that bake fast.
Why it happens
The numbers are less kind than they look
Cow's-milk fior di latte typically runs 52–60% moisture. Low-moisture mozzarella sits at 45–52%, and buffalo mozzarella is higher than either. In round terms, a 125 g ball of fior di latte at 56% carries about 70 g of water; the same 125 g of a 48% low-moisture cheese carries about 60 g.
Ten grams does not sound like a disaster, and on its own it is not. What matters is where the water is. In a fresh cheese, a large share of it is free whey sitting in pockets between the curd, held in place by nothing but surface tension. Heat it and those pockets open all at once. In a low-moisture cheese the water is bound inside a tighter protein matrix, so it leaves slowly and mostly as steam rather than as liquid running downhill. Same rough quantity, completely different behaviour.
Your bake is too long for the cheese
In a 430–480 °C (800–900 °F) oven, a Neapolitan pizza is out in 60–90 seconds. The whey that leaves the mozzarella has almost no time to travel; it flashes to steam and goes up. Give the same cheese seven minutes at 250 °C (480 °F) and the water has all the time it needs to run sideways, find the sauce layer, and soak downwards into a base that is already fighting to dry out. That is the same failure as a soggy centre, arriving from above rather than from below.
This is why fresh mozzarella is not a mistake in Naples and often is one at home. The cheese did not change; the bake did. You are stacking water on water
Sauce is around 90% water. A generous 150 g of sauce puts about 135 g of water on the base before the cheese arrives. Add 150 g of fior di latte and you have brought another 84 g. Add sliced fresh tomato or mushrooms on top of that and a home oven is being asked to evaporate a quarter of a kilo of water in seven minutes while also crisping the dough. It cannot, so the surplus stays.
Slices seal, torn pieces drain
Cutting a ball with a knife gives you smooth, closed faces that hold their whey in until the heat forces it out mid-bake. Tearing gives you ragged, open surfaces that shed liquid on the bench, where it does no harm. Laying slices flat also spreads the cheese into a continuous sheet, which traps the steam coming off the sauce underneath it and stops it venting. Fix it now
- Tear, don't slice. Pull the ball into rough 2 cm pieces with your fingers.
- Drain it on a rack for 30–60 minutes. A rack over a tray beats a plate, because the cheese is not sitting back in its own whey. Kitchen paper works if you are short on time; press gently, do not squeeze.
- Weigh it and use less. 80–100 g on a 30 cm base. If you have 250 g of mozzarella and one pizza, you have enough for two.
- Scatter, leave gaps, and stay off the rim. Cheese to within 3 cm of the edge, in islands rather than a sheet.
- Add it late if your bake is long. For a bake over six minutes, put the pizza in bare or with sauce only, then add the cheese for the last 2–3 minutes. It melts perfectly well and never gets time to flood.
- Cut the sauce back to 80–100 g to make room for the water the cheese will bring.
- Blot the finished pizza. If it still pools, touch a sheet of kitchen paper to the surface for two seconds before you cut. Cosmetic, but it stops the pool running into the crust while it rests.
Prevent it next time
- Match the cheese to the bake time. Under two minutes, fresh mozzarella is the right answer. Over six, a low-moisture whole-milk mozzarella is.
- Buy the drier fresh mozzarella when you can. Balls packed loosely in a little brine behave better than ones swimming in a large tub of it.
- Drain the day before if you are organised. Torn cheese, covered, on a rack in the fridge overnight comes out noticeably firmer and melts more slowly.
- Never put fresh mozzarella on frozen or thawed vegetables. Two water sources on one base in one bake is not recoverable.
- Keep the base to an even 3 mm so there is structure under the cheese rather than a thin membrane that soaks straight through.
- Bake the classic margherita as hot and fast as your oven allows. Set the dough with the Neapolitan calculator, then get it in and out. Every extra minute is another minute for the cheese to let go.

Should I salt fresh mozzarella to draw the water out?
A light sprinkle after tearing does pull a little extra whey out by osmosis, but it is a small effect next to simply tearing and draining, and it is easy to over-salt a cheese that is already brined. Drain first, and only reach for salt if you are working with an unusually soft ball and are short on time.
