Polly-O whole milk mozzarella review: the block behind the East Coast slice

Verdict

Four ingredients, nothing on the cut faces, and a vinegar set the maker credits for the melt. The default block for a New York slice, if you will do the grating.

What it is

A solid chunk of low-moisture mozzarella made from whole milk, vacuum-packed. Polly-O's published panel for the chunk is four items long — pasteurised milk, vinegar, salt, enzymes — and the maker describes the cheese as made with high butterfat and a "flavour-enhancing vinegar set", which it credits for even melt and for holding up on reheating.

Polly-O publishes a nutrition panel for the chunk on that same page, as an image below the ingredients: a 28 g (1 oz) serving carries 200 mg of sodium, 6 g of fat, 4 g of it saturated, and 6 g of protein. At the standard 2.5 conversion from sodium to salt, 200 mg per 28 g works out at roughly 1.8 g of salt per 100 g, which is the figure in the specification panel and an ordinary number for a low-moisture mozzarella. It is worth knowing rather than worrying about, and worth counting once against a sauce you have already salted at 1%.

A note on the size, because this is where the record and the listing part company. Polly-O's own site publishes this cheese as a 227 g (8 oz) chunk, a 454 g (16 oz) chunk and a 3.4 kg (7.5 lb) loaf. The listing under this ASIN is a generic third-party one for a 907 g (2 lb) chunk, which retailers do stock but which does not appear on the maker's page — so treat the 907 g pack size as the seller's figure, and everything above about ingredients, milk type and set as the maker's. The listing also does not print the words "low moisture" anywhere; Polly-O's whole-milk chunk is its low-moisture line, and the fresh line is sold packed in water in tubs, which is a different product entirely.

"Vinegar set" is worth a sentence. Mozzarella curd can be acidified by a starter culture over hours or by direct acid in minutes; the direct-acid route is faster, more repeatable batch to batch, and gives a milder, cleaner-tasting cheese with slightly different melt behaviour. It is a manufacturing choice rather than a shortcut, and it is why a deli-counter block from a New York pizzeria supplier tastes the way it does.

What it changes

It removes the two failure modes that ruin the top of a home-oven pizza.

The first is water. This cheese sits at roughly 45–52% moisture against 52–60% for fresh mozzarella, and in a bake that runs six to eight minutes rather than 90 seconds, that difference leaves the pizza as a puddle instead of as steam — see watery pizza from fresh mozzarella for what that looks like and how much whey a fresh ball will actually shed.

The second is fat, and it works in the opposite direction to what people expect. Whole-milk low-moisture mozzarella carries far more fat in dry matter than part-skim. That fat melts out early, spreads across the surface and buffers the cheese against radiant heat from above, which is why part-skim is the version that dries out and blackens first when the cheese burns before the base cooks. Buying whole milk is not an indulgence here; it is the version that survives a domestic grill element.

What the block format adds on top of the cheese is the absence of a coating. Shredded mozzarella is dusted with starch or cellulose so it does not clump in the bag, and that dusting sits on precisely the surfaces that need to fuse into a sheet. Grate a block and there is nothing in the way. On a New York cheese slice or a pepperoni slice — where the cheese is most of the top and has to melt into one continuous, foldable layer — that is a visible difference rather than a theoretical one.

Two handling notes that make the block behave. Grate it cold, straight from the fridge, or it smears rather than shreds. And let the shreds come up to room temperature before they go on the pizza, so the cheese is not spending the first minute of the bake thawing while the base is already cooking.

Who should skip it

Skip it for Neapolitan pizza. A 90-second bake at 430 °C (810 °F) and up belongs to fior di latte, and a low-moisture block on that pizza tastes like a compromise because it is one.

Skip it if you will not grate. A block you never open is worse than a bag you use, and the shredded version of the same category is an honest trade rather than a defeat.

And skip the 907 g size if you make one or two pizzas a fortnight. Vacuum-packed mozzarella is fine unopened, but once it is cut the clock starts, and the 454 g (16 oz) chunk on the maker's own page is the size most home kitchens actually finish.

Skip it if

You want the cheese that belongs on a 90-second Neapolitan pizza. That is fior di latte, torn and drained, and any low-moisture block will read as rubbery and flat beside it however good the block is.
