NY Pepperoni
America's favorite pizza — the NY cheese slice topped with natural-casing pepperoni that curls into crispy, greasy cups.

Find natural-casing pepperoni. We mean it. The standard supermarket stuff is glued together with a synthetic casing that won't cup or crisp the way real pepperoni does. Look at a deli counter, not the snack aisle. Once you have it, slice it thin (about 1.5mm), lay it on top of the cheese, and let the oven do the rest. The cups form, fill with rendered fat, and crisp around the edges. The hot honey at the end is the trick we stole from Roberta's in Brooklyn. Don't argue with it.

Sauce & Cheese
- •as for cheese slice Cooked tomato sauce
- •300g, shredded Low-moisture mozzarella
Toppings
- •100g, thin-sliced Natural-casing pepperoni
- •drizzle Hot honey — Optional

Instructions

Prepare dough, sauce, and cheese as for NY cheese slice.

Top cheese evenly with pepperoni slices — don't overlap.

Bake at 500-550°F on steel for 6-8 minutes.
