Baking Steel Original review: the one home-oven upgrade that changes the crust

Verdict
The largest single change you can make to a home-oven base: eighteen times the conductivity of a stone, in a slab that will not crack.
What it is
A rectangle of pre-seasoned carbon steel, 40.6 × 35.6 cm and 6.4 mm thick (16 × 14 × 1/4 in), weighing about 6.8 kg (15 lb). There is no mechanism, no coating and nothing to configure. It sits on an oven rack and it is heated with the oven.
The number that matters is not on the box. Carbon steel has a thermal conductivity of roughly 45 W/m·K; cordierite, the ceramic most pizza stones are made from, sits near 2.5. That ratio — about eighteen to one — is the entire argument for buying steel instead of stone, and it is a property of the material rather than of this particular plate. A thicker steel stores more energy; a thinner one heats faster and gives back less. At 6.4 mm this is the common home compromise, heavy enough to hold a useful reserve and thin enough to come back to temperature between pies.
What it changes
Everything it changes happens in the first ten seconds of the bake, on the underside.
A domestic oven tops out at 250–290 °C (480–555 °F), and that ceiling is not negotiable. What is negotiable is how fast the stored heat in your baking surface crosses into cold, wet dough. At the same 250 °C reading, a steel moves that energy across far more aggressively than a stone does, which is why the base sets and colours in the time you have rather than staying pale and floppy while you wait for the cheese. It is also the most direct fix for a base that stays soggy in the middle: the water in the dough has to leave, and it leaves fastest where the heat arrives fastest.
Two consequences follow, and both are handling rather than hardware. Conduction moves stored heat — it does not manufacture heat you never put in — so the steel needs 45 to 60 minutes at full temperature before it is worth anything, timed from when the oven reaches its setpoint rather than from when you switched it on. And that same conductivity will burn a base as efficiently as it browns one, so the steel belongs on an upper rack with the grill element available for the last minute, not on the oven floor, which is the usual cause of a burnt base under undercooked toppings.
What it will not do is give you leopard spots. That char needs a deck around 400 °C and above, and nothing you conduct through a 250 °C slab gets the rim there. A steel gives you the fastest bake available at home; it does not turn a kitchen oven into a Neapolitan one, and any page that says otherwise is selling something.
Where it earns its keep is on the styles that live at home temperatures — a New York cheese slice that has to hold a fold, or a classic margherita that would otherwise come out blond.
Who should skip it
If your oven already reaches 430 °C (800 °F) — a gas or wood-fired outdoor oven — the base is set before conduction becomes the bottleneck, and this is a heavy, expensive way to change nothing.
Skip it too if you are not prepared to preheat properly. A steel given 20 minutes is worse than a stone given an hour, because the mass you paid for is exactly the mass that has not come up to temperature yet. And if lifting 6.8 kg out of a hot oven is not something you want to do, buy a lighter, thinner steel rather than this one and accept a slower recovery between pizzas — the material is doing the work, not the weight.

You already bake in an oven that reaches 430 °C (800 °F) or more. At that deck temperature the base is set long before conductivity becomes the limiting factor, and the steel buys you nothing.
