BBQ chicken pizza done badly tastes like a sad menu add-on. Done well, it's one of the most addictive pizzas you can make at home. Two tricks. First: split the BBQ sauce — toss the chicken in half, then drizzle the rest on top after baking. BBQ sauce baked at 500°F caramelizes into something acrid. Second: red onion goes on raw; it cooks just enough in the residual heat to soften without losing bite. Fresh cilantro at the end cuts the sweetness.

  • 1 batch Detroit-style pizza dough

Toppings

  • 250g Brick cheese or mozz mix
  • 200g, shredded Cooked chicken breast
  • 100ml BBQ sauce
  • 1/2, thinly sliced Red onion
  • handful Fresh cilantro

Instructions

    Toss shredded chicken with half the BBQ sauce.

    Press dough into pan, let rise, add cheese to edges.

    Distribute BBQ chicken and red onion slices.

    Bake at 500-550°F for 12-15 minutes.

    Drizzle remaining BBQ sauce in stripes and top with cilantro.
