Pizza stuck to the peel

The short answer

Moisture from the dough has turned your bench flour into glue, and time is what let it happen. Launch within 60 seconds onto a bed of coarse semolina, shake the peel every 20 seconds while you dress, and free a stuck pizza with a bench scraper before you try again.

What you're seeing

The base went onto the peel and slid around happily. You put on the sauce, laid the cheese, arranged the salami, opened the oven — and now the pizza will not move. You shake harder and one edge lets go while the centre stays welded, so it launches half-off and folds itself into a calzone on the stone. Lift what is left and you can see the problem: a damp, grey, glued patch right under the middle where a minute ago there was dry flour. Nothing about the pizza changed except how long it sat there.

The short answer

Dough moisture soaked into your bench flour and turned it into paste. The fix is speed and grain size: a thin bed of coarse semolina rather than fine flour, everything dressed and launched inside 60 seconds, and a shake of the peel every 20 seconds so you find out about a sticking point while you can still fix it.

Why it happens

Flour under a dough is on a clock

Dry flour under a base works as a loose, rolling layer of particles — the dough rides on top of them and slides. But dough is mixed at 60–65% hydration (baker's percentage) and its surface is wet, so from the moment it lands it starts hydrating whatever is beneath it. Fine flour absorbs quickly and turns into a thin, sticky dough of its own, which glues the base to the wood or metal underneath.

Coarse semolina resists this in two ways. The particles are much larger, so a given weight of them presents far less surface area to absorb water, and they stay discrete and rollable much longer. They are also hard enough to act like tiny ball bearings under the base. This is why a professional launch is dressed and gone in under a minute — no amount of semolina survives four minutes of arranging toppings.

Wet toppings punch straight through the bed

The other route to a glued base is from above. Sauce spread right to the edge runs over the rim and down onto the peel. Fresh mozzarella releases whey as soon as it is torn. Marinated artichokes, olives in oil and thawed vegetables all leak. Any of these that reach the peel surface do not just wet the semolina — they get underneath the base, where the dough sits in liquid.

Keep sauce 2 cm inside the edge, pat wet ingredients dry, and dress toward the centre rather than out toward the rim. A diavola is a good example of the easy case: dry salami, restrained sauce, nothing that weeps.

The dough itself may be the problem

A slack, over-fermented or genuinely too-sticky dough sticks faster than a healthy one, because its surface is wetter and its structure lets it settle into the texture of the peel instead of resting on top of it. If your base spreads and slumps on the peel rather than sitting as a taut disc, no amount of semolina will save the launch — go back to the dough.

Wood and metal behave differently

A metal peel is thin, rigid and slides under a baked pizza beautifully, which makes it the better retrieval tool. It is also smooth and non-porous, so the moisture the dough gives off has nowhere to go: it stays as a film at the interface, and the dough has nothing to grip but water. Temperature is not the mechanism — a peel at room temperature does the same thing. Wood is porous and slightly rough; it takes a little of that surface water into the grain and buys you more time. Plenty of people launch from wood and retrieve with metal, and it is a genuinely good system rather than an affectation.

Fix it now

  1. Break the seal with a bench scraper. Slide it flat under the stuck area — keep it parallel to the peel, not angled into the dough — and lift just enough to let air in.
  2. Puff semolina into the gap. A pinch, blown or flicked into the space you just opened, is usually enough to get it moving again.
  3. Shake properly. Tilt the peel to about 20° and use short, sharp jerks. Slow tipping drags the pizza; sharp movement releases it.
  4. If it is welded, use parchment. Slide a sheet under the pizza, launch it paper and all, and pull the paper out after 60–90 seconds once the base has set. Check your paper's rating — most scorches above about 220 °C (430 °F), so do not leave it in for a full bake.
  5. Launch decisively. Get the front edge of the peel to the far side of the stone, then pull the peel straight back in one motion. Hesitating mid-launch is what folds a pizza over.
  6. Rescue a folded pizza. If it lands as a half-calzone, open it with tongs immediately — within the first 15 seconds, before the dough sets — and push the toppings back into place. It will not be pretty, but it will be pizza.

Prevent it next time

  • Dress on the peel, in under 60 seconds. Have sauce, cheese and toppings ready in bowls before the base leaves the bench. This is the whole fix; everything else is insurance.
  • Shake every 20 seconds while you dress. Sauce on, shake. Cheese on, shake. You will catch a sticking point when a pinch of semolina still solves it.
  • Use coarse semolina, thinly. A thick layer burns on the stone and tastes gritty; a thin, even scatter is all that is required.
  • Stretch on the bench, not on the peel. Pressing a base out on the peel drives the dough into the surface and pushes the flour aside from the start.
  • Keep sauce 2 cm from the edge and pat fresh mozzarella dry before it goes anywhere near the base.
  • Launch from wood, retrieve with metal if you have both. If you have one, make it a rigid peel with a thin leading edge and give the dough less time on it.
  • Fix a slack dough at the source. If it stuck because it was wet and spreading, the 00 flour and the ferment schedule are where to look, not the peel. And once it is in the oven, a base that arrived badly is also the one most likely to stick to the stone.
