Pizza oven smoking too much

The short answer

Smoke is unburned fuel — burnt flour on the floor, spilled fat, wet wood, or a gas burner running rich. Brush the floor between pizzas, cut back the bench flour, and keep the flame clean. There is nothing to buy here.

What you're seeing

The first pizza went in fine. By the second or third, opening the door releases a cloud of grey smoke that fills the garden or sets off the alarm, and it keeps coming between bakes. The pizzas start tasting of it — not the warm, faintly sweet note people mean by wood-fired, but something sharp and ashy. Turn a base over and black specks are welded to it. Nothing is broken; the oven is burning things you did not mean to cook.

The short answer

Smoke is fuel heated but not completely burned, and it comes from four places: flour carbonising on the floor, fat past its smoke point, wood too wet or resinous to combust, or a gas burner running rich. Brush the floor between pizzas, use far less bench flour than you think you need, and keep the flame clean. This costs nothing to fix — there is no product on this page, because there is nothing to buy.

Why it happens

Loose flour burns long before your pizza does

Starch and protein begin to pyrolyse — break down thermally into volatile compounds — from around 180–200 °C, and your floor runs at 400 °C or more. Plain flour landing on it does not toast; it carbonises on contact and smoulders.

Every launch sheds some. The problem is quantity: most people use several times more bench flour than a launch needs, and the excess lands on the floor — which is why smoke starts on pizza two or three. Semolina is better because its coarser particles roll rather than pack, so a thinner layer works — but it burns just as readily once down there.

Fat smokes long before the dough does

Extra virgin olive oil starts smoking around 190–210 °C, and milk fat from mozzarella is in the same region. A dribble of oil off the disc, or cheese that slid off at launch, hits a 400 °C floor already past its smoke point and gives dense white smoke and acrolein — much of that acrid taste. Pizzas dressed to the edge spill most; a marinara with a 2 cm dry rim spills almost nothing.

Home ovens fail the same way, slower: cheese dripping onto the floor or element carbonises and smokes on every later bake, and because it is out of sight people blame the pizza.

Wet or resinous wood cannot burn cleanly

Burning wood happens in two stages: heat drives volatile gases out, and those gases burn above it in the visible flame. The second stage needs roughly 600 °C and plenty of oxygen. If the wood is green — 40–60% moisture against under 20% for seasoned — much of the fire's energy goes into boiling that water off, the firebox never reaches combustion temperature, and the volatiles go up the flue unburned. That is the smoke: fuel you paid for and got no heat from.

Resinous softwoods make a different mess: pine and spruce release terpene-heavy volatiles that burn sooty and deposit creosote. Airflow is the third factor — a fire choked by a closed flue, a blocked vent, or ash piled round the embers smoulders rather than flames, and a smouldering fire smokes by definition. It is also unevenly hot, a common reason pizzas start cooking unevenly.

Gas ovens smoke from the burner, not the fuel

Gas is a clean fuel, so smoke from a gas oven is a combustion fault, not a fuel problem. A correct burner runs a crisp blue flame; a lazy yellow one is running rich — too little air for the gas — and the unburned carbon comes out as soot. The usual causes are a blocked or misadjusted air shutter, ports clogged with carbon and grease, and, after any spell outdoors, a spider web in the venturi tube. Spiders genuinely favour those tubes, and one web restricts airflow enough to turn a blue flame yellow. An oven that has sat all winter also burns off a season of oily residue and dropped cheese when you first fire it.

Fix it now

  1. Brush the floor between every pizza. A stiff brass or natural-bristle brush, one sweep back to mouth. This alone solves most cases.
  2. Never throw water at it. Hot floor plus cold water means thermal shock and a steam blast in your face. Dry brush now, damp cloth once cold.
  3. Knock the flour off before you launch. Lift the dressed base at one edge and shake the peel hard; loose flour should land on the bench, not in the oven.
  4. Feed the fire and open it up. Two or three small dry splits, flue open, embers clear of ash. Flame, not a red glow.
  5. Get out what fell in earlier. Cheese or dough dropped at launch comes out with the peel, not smoulders all session.
  6. On a gas oven, look at the flame. Blue and steady is right. Yellow or lazy means it is running rich: shut the gas off, let it cool, then clear the ports and check the venturi for a web.
  7. In a home oven, look underneath. Cold oven, torch, floor and element: scrape off burnt-on cheese. Smoke on every bake means old spillage.
  8. If the wood is wet, stop using it tonight. No airflow makes 50% moisture wood burn clean. Switch to any dry hardwood, even for a smaller fire.

Prevent it next time

  • Use semolina, sparingly. A dusting you can see the peel through is enough. More is not insurance, it is fuel.
  • Keep a rim dry. 2 cm of undressed edge stops sauce and oil short of the floor.
  • Do not oil the peel. It ends up on the floor at every launch and smokes all evening.
  • Service a gas oven once a season. Burner ports, venturi, and air shutter per the manual, plus floor and deflector. Ten minutes cold beats an evening of soot.
  • Season the wood properly. Split, stacked off the ground under cover 12–24 months, under 20% moisture. Hardwood only — nothing painted, glued, or treated.
  • Build the fire early. Lit twenty minutes before the first pizza it is still in its smoky phase; give it an hour and it burns clean.
  • Rake ash out between sessions. A deep ash bed starves the embers and turns a clean fire smoky.
  • Keep the load light. An overdressed pizza spills, and a spill you cannot reach smokes until it burns out — the same excess behind a burnt base under undercooked toppings.

Should I clean the floor of a hot pizza oven with water?

No. Pouring or spraying water onto a hot refractory floor or a cast stone can crack it through thermal shock, and it will steam violently in your face. Brush the debris off dry with a stiff brush while the oven is hot, and save any damp wiping for a floor that has cooled completely.
