Dough is too sticky to handle

Why it happens

  • Hydration too high for your flour
  • Under-kneaded (gluten not developed)
  • Too warm — warm dough is stickier

How to fix it

    Add flour 10g at a time while kneading (don't dump)

  2. 2

    Knead longer — 10 min minimum for most styles

  3. 3

    Wet your hands instead of adding flour

  4. 4

    Refrigerate for 30 min to firm up, then try again
